چکیده

Egg alternatives may replace egg as a functional ingredient in French vanilla ice cream due to their functional and dietary benefits. These egg alternative ingredients include modified corn starch (MCS), whey protein concentrate (WPC) and soy protein isolate (SPI). The objective of this study was to compare the physical and sensory properties of several commercially available egg alternatives in a vanilla ice cream formulation. The SPI exhibited a significantly lower L value compared with the other egg alternatives, whereas the control exhibited a significantly higher b value compared with the other treatments. The apparent viscosity value of MCS was approximately 10-fold greater than the other egg alternatives. There were no significant differences in appearance and mouth-feel among the control, MCS or WPC treatments, whereas SPI exhibited a significantly lower mouth-feel score compared with the other treatments. The control exhibited significantly higher flavor and acceptability scores compared with the other egg alternatives, whereas SPI treatment exhibited least desirable flavor and acceptability. Consumer panelists would purchase the control with the egg alternative formulations. PRACTICAL APPLICATIONS The egg alternatives were used to replace egg as a functional ingredient in French vanilla ice cream production. These alternatives can deliver functionality at a lower cost and can be incorporated to produce a suitable ice cream. 3 Corresponding author. Consumption of 2 and 4 egg yolks/d for 5 wk increases macular pigment concentrations in older adults with low macular pigment taking cholesterol-lowering statins.

BACKGROUND Lutein and zeaxanthin may reduce the risk of dry, age-related macular degeneration because of their photo-oxidative role as macular pigment. OBJECTIVE The present study evaluated serum lutein, zeaxanthin, and macular pigment optical density (MPOD) responses at 0.25 degrees , 0.5 degrees , and 1 degree retinal eccentricities to the consumption of 2 and 4 egg yolks/d by older adults ...

Effect of egg yolk substitution by sweet whey protein concentrate (WPC), on physical properties of Gelato ice cream

The aim of this research was to evaluate the changes in the Gelato ice cream properties at different levels of sweet whey protein concentrate (WPC) substitutions of egg yolk. Samples were made with two levels of egg yolk (4.5 and 9%). For each level one control sample with no WPC addition and four levels of WPC substitutions (20, 50, 80 and 100%) were made. Three replications of each treatment ...

Comparison of Natural and Synthetic Carotenoids: Effect on Yolk Colour and Oxidative Stability of Yolk Lipids

Two experiments were performed to evaluate the effect of synthetic and natural carotenoids on the daily output of eggs and some parameters of their quality. The hens were fed a control diet and diets supplemented with synthetic carotenoids Carophyll Red and Carophyll Yellow, lutein, algae Chlorella, and mustard meal. Carotenoids had no effect on hen-day egg production. Both synthetic and natura...
